Romanian Cucumber Salad (Oil-Free)

 



Serves: 4

 

Ingredients:

1 large onion, chopped;

4 English cucumbers (peeled if not organic), thinly sliced;

2 tablespoons iodine-free salt;

2 tablespoons organic apple cider vinegar;

1 cup water;

 





Instructions:

Place the cucumber slices and chopped onion in layers in a large bowl and sprinkle the salt in between the layers.

Let it rest for an hour at room temperature.

Squeeze the cucumbers and onions through a strainer or by hand, to press out the juice.

In a bowl, mix the squeezed vegetables with the rest of the ingredients and serve.

Keep refrigerated for 3-4 days. Drain the extra juice when re-serving.
