Mashed Potato Mayonnaise

 

Ingredients:

 

2 potatoes, peeled, boiled and mashed;

1 cup first cold pressed olive oil;

1 tablespoon organic mustard;

1/4 teaspoon organic turmeric powder (optional);

 
Instructions:

Place the potatoes, mustard and turmeric (optional) in a bowl, and mix with a hand blender at medium speed, slowly adding the oil in small quantities until it turns into a smooth, homogenous cream.

 

May be kept in the refrigerator for up to a week.
