Cashew Mint Ice Cream – Raw Vegan / Vegetarian Recipe

Raw Vegan Mint Ice Cream






Ingredients:

1 ½ cups raw cashew nut, soaked for 8 h in advance, and drained;

½ cup fresh mint leaves;

2 ripe avocados, peeled and pitted;

2 cups organic full fat coconut milk or another dairy-free milk;

2/3 cup maple syrup or organic raw sugar;

1 tablespoon organic vanilla extract;

3 tablespoons organic coconut oil or first cold pressed olive oil;



Instructions: 

Place the ingredients in the food processor and mix for at least 15 seconds, until it turns into a smooth cream.




Transfer the ice cream in a glass container and freeze for at least one hour.

Take out the ice cream and leave at room temperature for 30 minutes before serving.
