Mushroom Spread with Cashew Mayonnaise – Vegan / Vegetarian Recipe

Mushrooms with Cashew Mayonnaise Recipe

 







 

Ingredients:

 

750 g (about 5-6 cups) washed and diced raw mushrooms;

1 ½ cups vegan cashew mayonnaise;

 

Recipe for the vegan cashew mayonnaise:

¼ tablespoon iodine-free salt;

3 green onions, diced (or ¼ cup diced onions);

 2 organic garlic cloves, minced (or ¼ tablespoon organic garlic powder);

 ¼ cup fresh parsley leaves, minced;

¼ cup fresh dill leaves, minced;

a hint of grpund black pepper;

 

Instructions:

Cook mushrooms in salted water for 4-5 minutes. Drain and let them cool down.

Mix with the other ingredients in a bowl, with a wooden spoon.

Serve fresh, with kamut or spelt bread, and raw vegetables.

Keep refrigerated for up to 4-5 days.
