Vegan Cashews and Cauliflower Mayonnaise
 
 


 

Ingredients:

½ cup cashews, hydrated at least 4 hours in advance;

1 cup cauliflower, boiled in salted water for 10 min.;

¼ teaspoon curcuma powder;

2 tablespoons lemon juice;

1 teaspoon organic mustard;

½ cup first cold pressed olive oil.
 
 

Instructions:
Mix all ingredients (except for the oil) in the blender, slowly adding the oil in small quantities until it turns into a smooth, homogenous cream.
 
May be kept in the refrigerator for up to 4-5 days.
