Quinoa with Raw Vegetables
Note: A pseudo-cereal (quinoa ) is a complete vegan protein.
Serves: 4
Ingredients:
2 cups cooked organic quinoa (boil 1 diced onion with 2/3 cup raw quinoa, washed and rinsed, in 2 cups salted water, for 15 min, at medium heat, then let it rest for 5-10 min.);
1-2 thinly sliced zucchini;
1-2 thinly sliced carrots;
½ cup fresh parsley, minced;
Instructions:
Mix all ingredients and serve hot with a raw salad. In the picture, the meal was served with a raw beet salad.
