Pumpkin Puree
Note: Wash and dry the pumpkin seeds, then place them in an oven tray for max 10-15 min. at 400 F, turning the seeds from time to time. Serve hot or cold. They are absolutely delicious, full of excellent nutriments and very low calories.
Ingredients:
1 large pumpkin of your
choice;
1 cup water;
Instructions:
Turn on the oven at 400 F.
Cut the pumpkin in two.
Take out the seeds. Wash and drain.
Place the two halves face
down on an oven tray.
Add the water and place it
in the oven for 20 min.
Take out the pumpkin and let it rest for 5-10
min.
Peel off the skin and mash
the flesh into a puree.
Keep the rest in the
freezer, packed in one cup bags for the next recipes.
