Red Beans with Vegetables and Organic Whole Grain Corn


Note: A legume (beans) combined with a cereal (corn) is an example of a complete vegan protein.

Friendly reminder: For an alkaline nutrition, the ideal quantity of protein (in this case, beans + corn) should not exceed 25 % of one’s plate. The rest of 75 % should be filled with vegetables, ideally raw.

Serves: 4





Ingredients:

4 cups cooked red (kidney) beans (soaked overnight before boiling);

2 cups organic whole grains corn, defrost and lightly heated in warm water for 5-10 min, and drained;

1 large onion, chopped;

1-2 garlic cloves, minced;

1 sweet pepper, minced;

4-5 tablespoons first cold pressed olive oil;

1 shredded carrot;

1 teaspoon iodine-free salt;

¼ teaspoon black pepper powder;

½ cup minced fresh parsley;

2/3 cups water (if possible, use the water drained off the beans).



Instructions:

Stir the onion and garlic in oil for 2-3 min.

Add the rest of vegetables, and continue cooking for another 2-3 min.

Add the beans, corn, water, salt and pepper, and let it simmer for 2-3 min.

Turn off the heat, add the parsley and mix.

Serve with a raw vegetables salad.

Haricots rouges au maïs servis avec une salade crue aux fèves germés




Ingrédients pour les haricots aux légumes :

-          4 tasses d’haricots cuits (hydratés pendant la nuit au paravent);
-          2 tasses maïs bio surgelé;
-          un gros oignon en tranches;
-          un poivron doux en dés;
-          4-5 c. huile d’olives première pression à froid;
-          une carotte râpée;
-          sel sans iode;
-          ¼ c. à thé poivre noir moulu;
-          une poignée de persil vert émincé;
-          2/3 tasses d’eau (de l’eau de caisson des haricots, si possible).

Préparation :
Faire revenir l’oignon et l’ail dans l’huile à feu doux pendant 2-3 min. Ajouter le reste des légumes, le maïs, sel et poivre et continuer la cuisson encore 2-3 min. Ajouter le l’eau et les haricots cuits et laisser cuire encore 2-3 min. Éteindre le feu, ajouter le persil et mélanger. Servir avec une salade crue. Dans la photo, les haricots sont servis avec une salade verte aux rondelles d’oignons et fèves germées. Bon appétit! Pofta buna! 



Red kidney beans with corn and vegetables served with green salad and beans sprouts

Ingredients for the beans:
-          4 cups cooked kidney beans (soaked overnight in advance);
-          2 cups frozen organic corn;
-          1-2 sliced onions;
-          4-5 tablespoons first pressed olive oil;
-          1 chopped sweet pepper;
-          1 shredded carrot;
-          1 cup chopped fresh parsley;
-          1 tablespoon iodine-free salt;
-          ¼ teaspoon black pepper powder;
-          2/3 cups water (if possible, the water in which the beans were boiled).


 Instructions:
Stir the onions in oil for 2-3 min. Add the rest of vegetables, corn, salt and pepper, and continue cooking for another 2-3 min. Add the beans, water and parsley and let it simmer for 2-3 min. Se serve it with raw vegetables salads. The one in the picture is served with green lettuce, onion rings and beans sprouts. 



Fasole uscata boabe fiarta cu legume-servita cu salada cruda



Ingrediente pt. fasole:
-          4 cani de fasole boabe fiarta (inmuiata in prealabil peste noapte);
-          2 cani porumb bio congelat;
-          o ceapa mare feliata;
-          4-5 lg. ulei de masline prima presare la rece;
-          1 ardei gras dulce;
-          un morcov razuit;
-          un pumn de patrunjel verde maruntit;
-          o mana de sare neiodata si fara aditivi;
-          ¼ lg-ta piper macinat;
-          2/3 cani apa (din apa in care a fiert fasolea, daca se poate);

Preparare :
Se caleste ceapa in ulei la foc mic 2-3 min. Se adauga restul legumelor, porumbul, sarea si piperul si se mai calesc 2-3 min. Se adauga apa si fasolea si se lasa la foc mic 2-3 min. Se stinge focul, se adauga patrunjelul si se amesteca. Se serveste cu salata de cruditati. In poza, fasolea e servita cu salata verde, rondele de ceapa si germeni de fasole.

Fasole uscata boabe fiarta cu porumb - servita cu salada cruda de castraveti





Ingrediente pt. fasole:
 -          4 cani de fasole boabe fiarta (inmuiata in prealabil peste noapte);
-          o ceapa mare taiata marunt;
-          4-5 lg. ulei de masline prima presare la rece;
-          ½ ardei gras dulce;
-          un morcov razuit;
-          un pumn de patrunjel verde maruntit;
-          o mana de sare neiodata si fara aditivi;
-          piper si alte condimente, dupa gust;
-          2/3 cani apa (din apa in care a fiert fasolea, daca se poate);
 
Preparare :
Se caleste ceapa in ulei la foc mic, 5 min. Se adauga restul legumelor si sarea si se mai calesc 5 min. Se adauga apa si fasolea si se lasa la foc mic 2-3 min. Se stinge focul, se adauga patrunjelul si se amesteca. Se serveste cu salata de cruditati. 

Salata cruda de castraveti

 


Ingrediente pt. salata de castraveti :
-          o ceapa mare taiata felii;
-          1 castravete mare taiat in dreptunghiuri de 2-3 cm;
-          2 lg. ulei de masline prima presare la rece;
-          1 lg-ta. otet de cidru de mere;

Preparare :
Se amesteca toate ingredientele si se serveste. Pofta buna!
